Serving Size Tip
A trait that I inherited from my mother is that I always make too much of one dish. Rather than eating huge amounts, I've learned to pack my leftovers into single-serving dishes. You can buy cheap-o "tupperware"-type Gladware stuff and pack your leftovers. This way if you don't think you can finish in a couple days, just throw the rest into your freezer for a couple weeks down the road. Also, you have a ready-to-go pre-portioned meal.
